🌿 Today’s Allergy-Friendly, Family-Friendly Meals (Breakfast, Lunch + Dinner)

 



Parenting means thinking about what fuels your family best! Today, my son had a simple, energizing breakfast — grapes and a banana. πŸ‡πŸŒ He goes through grapes like crazy, so I love that I found a hack to get them from the fruit market at a quarter of the usual price. Fruit is such an easy, nutritious start to the day, and my daughter and I fueled up with our allergy-friendly meals. πŸ’ͺ🏾πŸ₯£ 

Breakfast: Green Banana Water + Sweet Potato with Mackerel



Cost: ~£2–3 per serving

Cooking Time: ~20 minutes

  • 1 green banana (boiled with skin on)
  • 1 sweet potato (peeled and boiled or juiced)
  • ½ tin coconut milk
  • 1 tin mackerel in tomato sauce
  • Optional: thyme, parsley, coriander

  1. Boil green banana with the skin on. Drink the water for a natural iron & potassium boost.
  2. Peel and boil/juice sweet potato, mix with ⅓ cup coconut milk.
  3. Add mackerel + coconut milk to pan, heat gently.
  4. Serve sweet potato mixture alongside mackerel and sip the green banana water.

  4. Add sardines + coconut milk: Stir gently to combine.
  5. Season: Sprinkle thyme + garlic & coriander seasoning.
  6. Finish: Add frozen veg to warm through. Serve over herbed coconut rice with plantain on the side.
