Today’s recipe is a comforting, nutrient-packed plate: Garlic Soy Spaghetti tossed with spinach, carrots, and sweet potatoes, finished with sardines for a protein boost. It’s warm, simple, budget-friendly, and filled with the best of seasonal autumn vegetables.
Not only is this meal delicious, but it also carries a message of resourcefulness — showing how to make the most of simple ingredients while staying healthy on a tight budget.
Ingredients
- Spaghetti (whole wheat or regular)
- 1–2 garlic cloves (minced)
- 1 tbsp rapeseed oil (or olive oil)
- 1 tbsp soy sauce
- 1 medium sweet potato (boiled, sliced) don’t boil too soft
- 1 carrot (boiled, sliced) do not boil too soft
- 1 tin sardines (in olive oil , drained)
- 1 handful of spinach steamed with veggies and also (fresh, added at the end)
- Seasonings: pinch of salt, black pepper, mixed herbs
Method
- Cook spaghetti according to packet instructions.
- In a pan, heat rapeseed oil and gently sauté garlic until fragrant.
- Toss in sweet potato and carrots, letting them absorb the garlic flavour. Done with veg seasoning (optional) remove from pot.
- Add sardines, do not break them let them sit
- Take out sardines add the veggie to soak up flavour sprinkle soy sauce ensure veggies do not break apart! Sprinkle in soy sauce.
- Toss everything with spaghetti. & spinach leaving a handful for garnish .
- Plate up place sardines on top and chilli flakes if you like heat !
- Just before serving, top with a handful of fresh spinach for a burst of colour and nutrients.
